Cabbage Pie
Ingredients:
pie crust*
olive oil or butter
bacon
cabbage, thinly sliced
onion, thinly sliced
garlic (if desired)
cheese, grated
egg, lightly beaten
herbs (fresh or dried)
salt
pepper
Brown a couple slices of bacon until all the fat is rendered. Remove the bacon from the pan and reduce heat to medium. Add the cabbage and onion and sprinkle with salt. Cook gently until translucent but not browned. If adding the garlic, add and cook for 1-2 minutes, until fragrant. Combine cabbage, onion, garlic, shredded cheese, beaten egg, bacon, and herbs. Season with salt and pile on the pepper. To keep from getting soggy, cook the crust for a couple minutes in a 350F oven. Spoon mixture into crust and cook until cheese turns golden brown.
