Garlic-ky Greens Sauté
Note: I don't recommend using this recipe for greens that are very tough or exceptionally bitter.
Ingredients:
extra virgin extra virgin olive oil and/or butter
2-3 cloves garlic
onion, thinly sliced
greens, chopped
dash of white wine (or other liquid to deglaze pan—stock, water, vinegar, etc)
salt and pepper
Heat oil in pan over medium-high heat. Sauté onions until starting to brown. Add half of garlic and Sauté for another minute or so, until onions are nicely browned. Deglaze pan by pouring enough liquid in to cover the bottom of the pan. Add greens and remaining garlic and cook for 1-3 minutes, until all the greens are wilted.
